Spicy Pinto Beans
- Makes: 7 cups
- Ingredients:
- 2 c. dried pinto beans, soaked
- 5½ c. chicken broth
- 1 onion, chopped
- ¼ c. green onions, chopped
- 2 tsp garlic, minced
- 1 jalepeno pepper, chopped
- 2 tsp vegetable bouillon granules
- 1½ tsp ground cumin
- 2 tsp chili powder
- 2 tomatoes, diced
- ¼ c. cilantro, chopped
- Directions:
- Combine all ingredients except for the tomatoes, green onions, and cilantro in a 4-quart pot. Bring to a boil over high heat. Reduce the heat to low, cover, and simmer for 80-100 minutes.
- Add the tomatoes to the bean mixture, and cook for 20-30 more minutes. Top each serving with cilantro and green onions. Also good with rice.
