VEGETABLE SOUP WITH RICE
- Makes: 8 servings
- Ingredients:
- 2 qts. plus 1 cup vegetable stock
- 3 carrots, diced
- 2 zucchini, diced
- 24 oz canned Great Northern beans, undrained
- 2¼ c. instant rice
- 1½ tsp Italian herb seasoning
- ¼ c. plus 2 tbsp lowfat Parmesan cheese, grated
- Directions:
- Bring stock and carrots to a boil in a saucepan over high heat.
- Stir in next 4 ingredients and cook 5 minutes.
- Sprinkle with Parmesan cheese
