VEGETABLE SOUP
- Makes: 7 servings
- Ingredients:
- 4 tomatoes, diced
- 2 c. vegetable broth
- 4 c. cabbage, shredded
- 1 c. corn kernels
- 1 c. green beans
- 1 onion, chopped
- 1 carrot, peeled, diced
- ¾ tsp salt
- ¼ tsp ground black pepper
- 1 tsp dried thyme
- 3 tbsp tomato paste
- Directions:
- Combine tomatoes and broth in a 4-quart pot, and bring to a boil over high heat.
- Reduce heat to low, cover, and simmer for 20-25 minutes.
- Add the remaining ingredients to the pot, and simmer for 20-25 minutes.
- Taste and adjust seasonings if necessary.
