Mexican Pizza
- Makes: 6 pizzas
- Ingredients:
- 16 oz. black beans, cooked
- 1 tbsp chili powder
- 1 tomato, chopped
- ¼ tsp whole cumin seed
- 6 non/lowfat flour tortillas
- 1½ non/lowfat cheese
- 6 thin onion slices
- 3 jalepeno peppers chopped
- 1 tomato, chopped
- ¾ c. shredded lettuce
- ¼ c. green onions, chopped
- Directions:
- Place beans in a bowl, stir in chili powder and set aside.
- Coat a large skillet with nonstick (nonfat) cooking spray and add the tomatoe and cumin. Place over medium heat and cook, stirring occasionally, 4-7 minutes.
- Add the beans to the skillet and stir until the beans are heated through and the mixture becomes thick. Remove from heat and set aside.
- Coat a large baking sheet with nonstick (nonfat0 cooking spray and lay the tortillas on the baking sheet. Spread the bean mixture over each tortilla. Top each tortilla with cheese, onions, jalepeno, and green onions.
- Baked uncover at 400 degrees F 7-10 minutes.
- Top each pizza with lettuce.
