Chicken Noodle Soup with Vegetables
- Makes: 8 servings
- Ingredients:
- 2 quarts plus 1 cup chicken stock
- 3 carrots diced
- 1½ tsp dried tarragon
- 1½ c. egg noodles
- ¾ lb. skinless chicken breasts, cut into thin strips
- 4½ c. frozen peas
- 1¼ lb. asparagus
- Directions:
- Bring first three ingredients to a boil in a saucepan ovaer high heat.
- Add noodles and chicken and cook at medium-high heat for 5 minutes.
- Add vegetables and cook another 2-3 minutes.
