Fruity Yogurt
- Makes: 6 servings
- Ingredients:
- 1½ cups non/lowfat yogurt
- 1 tbsp honey
- ½ tsp pure vanilla extract
- ½ tsp cinnamon
- ¼ tsp rum extract
- 1½ cups pineapple chunks
- ¼ cup orange juice concentrate
- 1 banana, sliced
- 2/3 cup strawberries, sliced
- 2/3 cup kiwi, peeled and sliced
- ½ cup lowfat granola
- ¼ cup chopped dates
- Directions:
- Mix togeather the yogurt, honey, vanilla, cinnamon, and rum in a bowl.
- Combine the pineapple chunks and orange juice concentrate. Bring to a boil, reduce the heat, and simmer for 5-7 minutes, stirring frequently. Allow to cool.
- Combine the pineapple/orange mixture with the bananas, strawberries and kiwis. Stir well. Add to yogurt and sprinkle granola and dates on top.
