Turkey Sausage Stew
- Makes: 8 servings
- Ingredients:
- 1¼ pounds lowfat turkey sausage, cut into 1 inch pieces
- 1½ pounds sauerkraut, drained
- 2¼ apples, peeled, cored and cut into rings
- ¾ onion, cut into rings
- 2 pounds red potatoes, quartered
- 1½ cups chicken stock
- ½ tsp caraway stock
- ½ cup non/lowfat Swiss cheese, shredded
- Directions:
- Place half the sausage in a crockpot and top with sauerkraut.
- Top this mixture with remaining sausage, apple, onion and potatoes.
- Add stock and caraway seeds.
- Cover and cook on high for 4 hours.
- top with cheese and serve.
