Potato and Parsnip Casserole

  • Makes: 8 servings

  • Ingredients:
    • 1½ c. parsnips, peeled and chopped
    • 1½ c. potatoes, chopped
    • ½ c. non/lowfat Swiss cheese, grated
    • 1½ tbsp non/lowfat Parmesan cheese, grated
    • 3 tbsp evaporated skim milk
    • 1 tbsp non/lowfat margarine
    • 3 tbsp parsley, chopped

  • Directions:
    • Steam parsnips and potatoes for 10-12 minutes or until tender.
    • Drain and return vegetables to pan, mash.
    • Stir in next 5 ingredients and pour mixture into a baking dish coated with nonstick cooking spray (nonfat).
    • Bake at 375 degrees F for 20 minutes.

    • Serving Size - 1/8 of casserole
    • Calories - 130
    • Fat - 2 gr
    • Cholesterol - 5 mg
    • Protein - 5 gr
    • Carbohydrates - 25 gr
    • Fiber - 3 gr
