Rice with Peas and Onions
- Makes: 8 servings
- Ingredients:
- 1½ tbsp non/lowfat margarine
- ½ c. onion, minced
- 1½ c. rice
- 3 c. chicken stock
- 3 c. peas
- ¼ c 2 tbsp. non/lowfat Parmesan cheese, grated
- Directions:
- Melt margarine in a saucepan and saute onion 3-5 minutes.
- Add rice and saute, stirring constantly, for 2 minutes.
- Add stock and bring to a boil.
- Once boiling, reduce heat to low, cover and simmer for 10 minutes.
- Add peas and steam for another 5-10 minutes.
- Stir in Parmesan.
