POTATO SALAD
- Makes: 8 servings
- Ingredients:
- 2½ pounds potatos
- 1 hard boiled egg, chopped
- 3 tbsp non/lowfat mayonnaise
- 3 tbsp non/lowfat sour cream
- ¼ c. dill relish
- 1 tbsp green onions, chopped
- 2 tbsp mustard
- 1 tsp dried tarragon
- Directions:
- Steam potatos for 20 minutes.
- Rinse potatos under cold water to cool.
- Combine eggs with remaining ingredients in a bowl.
- Peel potatoes and cut into chunks and mix into egg mixture.
