GARLIC AND BELL PEPPER LINGUINE
- Makes: 8 servings
- Ingredients:
- 1¼ pounds linguine
- 1 tsp. olive oil
- 9 garlic cloves, minced
- ¾ c. roasted red peppers, chopped
- 3 tbsp. non/lowfat Parmesan cheese, grated
- Directions:
- Cook pasta according to package directions.
- Heat oil in a nonstick skillet over medium heat.
- Add garlic and peppers and saute for 2-3 minutes.
- Mix pasta and garlic/pepper mixture in a bowl.
- Top with Parmesan cheese.
