Potato-Vegetable Salad
- Makes: 6 servings
- Ingredients:
- 5 new potatoes, cut into small cubes
- 2 tbsp white wine
- 1 tbsp tarragon, chopped
- 6 c. broccoli, chopped
- 1 c. cooked chick-peas
- ½ c. red onions, chopped
- ½ c. non/lowfat yogurt
- 4 tbsp fresh lemon juice
- 1 tbsp red wine vinegar
- 2 tsp spicy mustard
- ½ tbsp garlic, minced
- Directions:
- Steam the potatoes until they are tender. Mix with white wine and tarragon.
- Steam the broccoli until tender. Stir with chick-peas, onions, yogurt, lemon juice, red wine vinegar, mustard, and garlic.
- Combine the potatoes and vegetable mixture. Stir gently to mix thoroughly.
