Wild Rice and Mixed Vegetable Salad
- Makes: 5 servings
- Ingredients:
- 2 c. wild rice
- ½ c. corn kernels, cooked
- 1 green pepper, diced
- 1 tomato, chopped
- ½ c. gteen peas, cooked
- ¼ c. red onion, diced
- 2 tbsp garlic, crushed
- 5 tbsp frozen apple jouice concentrate
- 2 tbsp red wine vinegar
- 2 tbsp basil, chopped
- 1 tbsp parsley, chopped
- 1 tbsp tarragon, chopped
- 1 tbsp fresh lemon juice
- Directions:
- In a large bowl, combine all ingredients. Stir very well, until all ingredients are mixed well.
