BARBEQUED YOGURT CHICKEN

  • Makes: 8 servings

  • Ingredients:
    • 2 pounds boneless, skinless chicken breasts
    • 1 onion, wedged
    • 1/3 c. tomato sauce
    • ½ c. low/nonfat yogurt
    • ¾ tsp fresh ginger, chopped
    • 2 garlic cloves, whole
    • 1¼ tsp coriander
    • ¼ tsp cayenne pepper
    • ¾ cumin seeds
    • ¾ tsp salt

  • Directions:
    • Place chicken in a casserole dish and set aside.
    • Place onion, tomato sauce, yogurt, ginger, garlic cloves, cayenne pepper, sumin seeds, and salt in a blender.
    • Blend until smooth.
    • Pour sauce onto chicken and coat thoroughly.
    • Cover with plastic wrap and let set in the refrigerator up to 24 hours.
    • Remove chicken from the marinade (saving marinade) and arrange chicken in a broiler pan.
    • Bake uncovered at 400 degrees F for 30 minutes.
    • Turn pieces over and coat with remaining marinade.
    • Bake for an additional 10-15 minutes.
    • Flip chicken and broil for 5 minutes.
