BARBEQUED YOGURT CHICKEN
- Makes: 8 servings
- Ingredients:
- 2 pounds boneless, skinless chicken breasts
- 1 onion, wedged
- 1/3 c. tomato sauce
- ½ c. low/nonfat yogurt
- ¾ tsp fresh ginger, chopped
- 2 garlic cloves, whole
- 1¼ tsp coriander
- ¼ tsp cayenne pepper
- ¾ cumin seeds
- ¾ tsp salt
- Directions:
- Place chicken in a casserole dish and set aside.
- Place onion, tomato sauce, yogurt, ginger, garlic cloves, cayenne pepper, sumin seeds, and salt in a blender.
- Blend until smooth.
- Pour sauce onto chicken and coat thoroughly.
- Cover with plastic wrap and let set in the refrigerator up to 24 hours.
- Remove chicken from the marinade (saving marinade) and arrange chicken in a broiler pan.
- Bake uncovered at 400 degrees F for 30 minutes.
- Turn pieces over and coat with remaining marinade.
- Bake for an additional 10-15 minutes.
- Flip chicken and broil for 5 minutes.
